Ingredients

  • 2 Eggs
  • 1 cup Greek Yogurt
  • 2 tablespoon Butter
  • 1 teaspoon Paprika
  • 1 clove Garlic minced
  • 1 tablespoon Fresh Dill chopped
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. Bring a saucepan of water to a gentle simmer. Add a splash of vinegar.
  2. 2. Crack the eggs into separate small bowls. Gently slide the eggs into the simmering water and poach for 3-4 minutes.
  3. 3. In a mixing bowl, combine the Greek yogurt with minced garlic and a pinch of salt. Spread the yogurt mixture onto serving plates.
  4. 4. In a skillet, melt the butter over medium heat. Add paprika and stir until fragrant.
  5. 5. Place the poached eggs on top of the yogurt. Drizzle the spiced butter over the eggs.
  6. 6. Garnish with chopped dill, salt, and black pepper. Serve immediately.
