- 2 cups rhubarb, chopped
- 1 cup sugar
- 1 cup buttermilk
- 1 teaspoon baking soda
- 2.5 cups all-purpose flour
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- ½ cup vegetable oil
- 1 large egg
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large mixing bowl, combine the chopped rhubarb and sugar. Let it sit for 10 minutes.
Add the buttermilk, baking soda, flour, salt, vanilla extract, vegetable oil, and egg to the rhubarb mixture. Stir until just combined.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
