Quinoa Tabbouleh Recipe
A refreshing and healthy salad made with quinoa, fresh herbs, and vegetables.

Main Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup fresh parsley, chopped
- ¼ cup fresh mint, chopped
- ¼ cup olive oil
- 2 tablespoon lemon juice
- 1 teaspoon salt
- ½ teaspoon black pepper
Rinse the quinoa under cold water.
In a saucepan, bring water to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
Remove from heat and let it sit, covered, for 5 minutes. Fluff with a fork.
In a large mixing bowl, combine cooked quinoa, cherry tomatoes, cucumber, parsley, and mint.
In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
Pour the dressing over the quinoa mixture and toss to combine.
Serve chilled or at room temperature.
