  • 2 cups Mixed Greens
  • ½ cup Shelled Pistachios roughly chopped
  • ¼ cup Cranberries dried
  • ¼ cup Feta Cheese crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Honey
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. In a large mixing bowl, combine the mixed greens, pistachios, cranberries, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and black pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Serve immediately and enjoy!
