Pearl Couscous Salad Recipe

Main Ingredients
- 1 cup Pearl couscous
- 2 cups Water
- 1 cup Cherry tomatoes, halved
- 1 cup Cucumber, diced
- ¼ cup Red onion, finely chopped
- ¼ cup Feta cheese, crumbled
- 2 tablespoon Olive oil
- 1 tablespoon Lemon juice
- 1 teaspoon Salt
- ½ teaspoon Black pepper
1. Bring water to a boil in a saucepan. Add pearl couscous and cook for 10 minutes or until tender. Drain and let cool.
2. In a large mixing bowl, combine cooked couscous, cherry tomatoes, cucumber, red onion, and feta cheese.
3. Drizzle with olive oil and lemon juice. Season with salt and black pepper. Toss to combine.
4. Serve immediately or refrigerate for later.
