- 4 cups mashed potatoes cooled
- ¼ cup butter melted
- ½ cup heavy cream
- 1 teaspoon salt
- 2 ½ cups all-purpose flour
1. In a large bowl, combine the mashed potatoes, melted butter, heavy cream, and salt. Mix well.
2. Gradually add the flour, mixing until a dough forms. Knead lightly until smooth.
3. Divide the dough into small balls, about the size of a golf ball.
4. On a floured surface, roll each ball into a thin circle using a rolling pin.
5. Heat a griddle or skillet over medium-high heat. Cook each lefse for about 1-2 minutes on each side, until light brown spots appear.
6. Serve warm with butter, sugar, or your favorite spread.
