Ingredients

  • 1 cup sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup mango puree fresh or canned
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, combine flour, sugar, baking soda, and salt.
  3. In another bowl, mix mango puree, oil, eggs, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed. Pour into the loaf pan.
  5. Bake for 60 minutes or until a toothpick comes out clean. Let it cool before slicing.
