Main Ingredients
- 200 g Pasta any short pasta
- 1 cup Cherry Tomatoes halved
- 1 cup Cucumber diced
- ½ cup Red Onion thinly sliced
- ½ cup Black Olives sliced
- ½ cup Feta Cheese crumbled
- ¼ cup Basil chopped
Dressing
- ¼ cup Olive Oil
- 2 tablespoon Red Wine Vinegar
- 1 teaspoon Dijon Mustard
- 1 clove Garlic minced
- ½ teaspoon Salt
- ¼ teaspoon Black Pepper
1. Cook the pasta according to package instructions. Drain and let cool.
2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, black olives, feta cheese, and basil.
3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and black pepper.
4. Add the cooled pasta to the mixing bowl with the vegetables and cheese. Pour the dressing over the salad and toss to combine.
5. Serve immediately or refrigerate for up to 2 hours to let the flavors meld.
