Instructions
Heat the wok over medium-high heat and add the vegetable oil.
Add the minced garlic and stir-fry until fragrant.
Add the mixed vegetables and stir-fry for 2-3 minutes.
Push the vegetables to the side and pour the beaten eggs into the wok. Scramble the eggs until fully cooked.
Add the cooked rice and soy sauce. Stir-fry everything together for another 3-4 minutes.
Finally, add the pineapple chunks and chopped green onions. Stir-fry for another 2 minutes.
Serve hot and enjoy your Island Style Fried Rice!
