Ingredients 

Main Ingredients

  • 2 cups Pineapple chunks fresh or canned
  • 1 cup Diced ham
  • 1 cup Shredded coconut
  • 1 cup Chopped macadamia nuts
  • 1 cup Mixed greens
  • ½ cup Sliced red onion
  • ¼ cup Chopped cilantro
  • ¼ cup Lime juice fresh
  • 2 tablespoon Olive oil
  • to taste Salt and pepper

Instructions 

  1. 1. In a large mixing bowl, combine pineapple chunks, diced ham, shredded coconut, chopped macadamia nuts, mixed greens, sliced red onion, and chopped cilantro.
  2. 2. In a small bowl, whisk together lime juice and olive oil. Pour over the salad and toss to combine.
  3. 3. Season with salt and pepper to taste. Serve immediately.
