Main Ingredients
- 2 cups Pineapple chunks fresh or canned
- 1 cup Diced ham
- 1 cup Shredded coconut
- 1 cup Chopped macadamia nuts
- 1 cup Mixed greens
- ½ cup Sliced red onion
- ¼ cup Chopped cilantro
- ¼ cup Lime juice fresh
- 2 tablespoon Olive oil
- to taste Salt and pepper
1. In a large mixing bowl, combine pineapple chunks, diced ham, shredded coconut, chopped macadamia nuts, mixed greens, sliced red onion, and chopped cilantro.
2. In a small bowl, whisk together lime juice and olive oil. Pour over the salad and toss to combine.
3. Season with salt and pepper to taste. Serve immediately.
