- 1 lb Ground Beef
- 1 cup Chopped Onion
- 1 cup Chopped Carrots
- 1 cup Chopped Celery
- 2 cloves Garlic, minced
- 4 cups Beef Broth
- 1 can Diced Tomatoes (14.5 oz)
- 1 cup Frozen Corn
- 1 cup Frozen Peas
- 1 teaspoon Dried Basil
- 1 teaspoon Dried Oregano
- to taste Salt and Pepper
1. In a large pot, brown the ground beef over medium heat. Drain any excess fat.
2. Add the chopped onion, carrots, celery, and garlic to the pot. Cook until the vegetables are tender, about 5 minutes.
3. Pour in the beef broth and diced tomatoes. Stir in the frozen corn, frozen peas, dried basil, and dried oregano. Season with salt and pepper to taste.
4. Bring the soup to a boil, then reduce the heat and let it simmer for about 20 minutes.
5. Serve hot and enjoy!
