Ingredients 

Main Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef broth
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, cook the ground beef over medium heat until browned. Drain any excess fat.
  2. 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  3. 3. Stir in the sliced carrots and celery. Cook for about 5 minutes.
  4. 4. Add the can of diced tomatoes (with juice) and beef broth. Bring to a boil.
  5. 5. Reduce heat to a simmer and cook for 20 minutes, or until the vegetables are tender.
  6. 6. Stir in the frozen peas and corn, dried basil, and dried oregano. Cook for another 5 minutes.
  7. 7. Season with salt and pepper to taste. Serve hot.
