Main Ingredients
- 1 cup orzo pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- ½ cup red onion, finely chopped
- ½ cup kalamata olives, pitted and sliced
- ½ cup feta cheese, crumbled
- ¼ cup extra virgin olive oil
- 2 tablespoon red wine vinegar
- 1 teaspoon dried oregano
- 1 clove garlic, minced
- to taste salt and pepper
1. Cook the orzo pasta according to package instructions. Drain and rinse with cold water.
2. In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumber, red onion, kalamata olives, and feta cheese.
3. In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, minced garlic, salt, and pepper.
4. Pour the dressing over the salad and toss to combine.
5. Chill in the refrigerator for at least 30 minutes before serving.
