Main Ingredients
- 4 ears corn husked
- ¼ cup mayonnaise
- ¼ cup sour cream
- ½ cup cotija cheese crumbled
- 1 tablespoon lime juice freshly squeezed
- ½ teaspoon chili powder
- ¼ cup cilantro chopped
- ¼ teaspoon salt
- ¼ teaspoon black pepper freshly ground
1. Preheat grill to medium-high heat.
2. Grill the corn for about 10 minutes, turning occasionally, until charred and cooked through.
3. Remove corn from grill and let cool slightly. Cut the kernels off the cob and place in a large mixing bowl.
4. In a small bowl, mix together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
5. Pour the dressing over the corn and toss to coat evenly.
6. Add cotija cheese and cilantro, and mix well.
7. Serve immediately or refrigerate for later.
