Ingredients

  • 8 large Egg whites
  • 1 cup Chopped spinach
  • ½ cup Diced bell peppers
  • ¼ cup Chopped onions
  • ¼ cup Grated cheese optional
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk the egg whites until frothy.
  3. Add the chopped spinach, bell peppers, onions, salt, and pepper to the egg whites. Mix well.
  4. Grease a muffin tin and pour the mixture evenly into the cups.
  5. Sprinkle grated cheese on top if using.
  6. Bake for 20 minutes or until the egg bites are set and slightly golden.
  7. Let them cool for a few minutes before removing from the tin. Serve warm.
