Salad Ingredients
- 6 cups fresh spinach washed and dried
- ½ cup dried cranberries
- ½ cup sliced almonds toasted
- ¼ cup red onion thinly sliced
Dressing Ingredients
- ¼ cup olive oil
- 2 tablespoon balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 clove garlic minced
- to taste salt and pepper
In a large mixing bowl, combine the spinach, cranberries, almonds, and red onion.
In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Serve immediately.
