Ingredients 

Salad Ingredients

  • 6 cups fresh spinach washed and dried
  • ½ cup dried cranberries
  • ½ cup sliced almonds toasted
  • ¼ cup red onion thinly sliced

Dressing Ingredients

  • ¼ cup olive oil
  • 2 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1 clove garlic minced
  • to taste salt and pepper

Instructions 

  1. In a large mixing bowl, combine the spinach, cranberries, almonds, and red onion.
  2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, garlic, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. Serve immediately.
