Instructions 

  1. In a mixing bowl, whisk together the cottage cheese, eggs, milk, and vanilla extract.
  2. Add the flour, sugar, baking powder, and salt. Mix until just combined.
  3. Heat a non-stick skillet over medium heat. Lightly grease if necessary.
  4. Pour ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown.
