Ingredients 

Main Ingredients

  • 1 lb Chicken breast, diced
  • 1 package Gnocchi
  • 2 cups Spinach, fresh
  • 1 cup Carrots, diced
  • 1 cup Celery, diced
  • 1 cup Onion, diced
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 2 cloves Garlic, minced
  • to taste Salt and pepper

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and cook the diced chicken until browned. Remove and set aside.
  2. 2. In the same pot, add a bit more oil if needed and sauté the onions, carrots, and celery until they begin to soften.
  3. 3. Add the garlic and cook for another minute until fragrant.
  4. 4. Pour in the chicken broth and bring to a boil. Add the cooked chicken back into the pot.
  5. 5. Add the gnocchi and cook according to the package instructions, usually about 3-5 minutes.
  6. 6. Stir in the spinach and heavy cream. Cook until the spinach is wilted and the soup is heated through.
  7. 7. Season with salt and pepper to taste. Serve hot.
