Ingredients

  • 1 lb chicken thighs boneless, skinless
  • 1 lb andouille sausage sliced
  • 1 cup celery chopped
  • 1 cup green bell pepper chopped
  • 1 cup onion chopped
  • 3 cloves garlic minced
  • ½ cup flour
  • ½ cup vegetable oil
  • 4 cups chicken broth
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 2 pcs bay leaves
  • 1 cup okra sliced
  • to taste salt and pepper
  • 4 cups cooked white rice for serving

Instructions 

  1. 1. Heat the oil in a large pot over medium heat. Add the flour and cook, stirring constantly, until the mixture turns a dark brown color to make a roux.
  2. 2. Add the celery, bell pepper, onion, and garlic to the pot. Cook until the vegetables are tender.
  3. 3. Stir in the chicken broth, Cajun seasoning, thyme, and bay leaves. Bring to a boil.
  4. 4. Add the chicken and sausage to the pot. Reduce heat and simmer for about 45 minutes.
  5. 5. Add the okra and cook for another 10 minutes. Season with salt and pepper to taste.
  6. 6. Serve hot over cooked white rice.
