- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 cup sugar
- 2 cups grated zucchini
- 1 cup blueberries
- 2 eggs beaten
- ½ cup vegetable oil
- 1 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, combine flour, baking powder, baking soda, and salt.
In another bowl, beat together the eggs, oil, vanilla, and sugar. Add the grated zucchini and mix well.
Stir the dry ingredients into the zucchini mixture until just combined. Gently fold in the blueberries.
Pour the batter into the prepared loaf pan. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before removing it to a wire rack to cool completely.
