Ingredients

  • 1 cup Cornmeal
  • 1 cup All-purpose flour
  • ½ cup Sugar
  • 1 tablespoon Baking powder
  • ½ teaspoon Salt
  • 1 cup Milk
  • ¼ cup Vegetable oil
  • 2 Eggs beaten
  • 1 cup Blueberries fresh or frozen

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a baking pan.
  2. In a mixing bowl, combine cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together milk, oil, and beaten eggs.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Gently fold in the blueberries.
  6. Pour the batter into the prepared baking pan.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool before serving.
