Main Ingredients
- 3 lbs Beef chuck roast
- 4 cups Beef broth
- 1 Onion, chopped
- 4 cloves Garlic, minced
- 2 tablespoon Apple cider vinegar
- 2 tablespoon Chili powder
- 1 teaspoon Ground cumin
- 1 teaspoon Dried oregano
- to taste Salt and pepper
Taco Assembly
- 12 Corn tortillas
- 1 cup Chopped cilantro
- 1 cup Diced onions
- 1 cup Shredded cheese
- to taste Lime wedges
1. In a large pot, combine beef, beef broth, onion, garlic, apple cider vinegar, chili powder, cumin, oregano, bay leaves, salt, and pepper.
2. Bring to a boil, then reduce heat and simmer for about 4 hours, until the beef is tender and shreds easily.
3. Remove the beef from the pot and shred it using two forks. Return the shredded beef to the pot and mix well.
4. Heat a skillet over medium heat. Dip each tortilla in the broth from the pot, then place in the skillet. Add shredded beef, cilantro, onions, and cheese to each tortilla. Fold and cook until the tortilla is crispy.
5. Serve the tacos with lime wedges on the side.
