Beet Salad with Goat Cheese
A fresh and vibrant beet salad topped with creamy goat cheese.

Main Ingredients
- 4 medium beets trimmed and scrubbed
- 2 cups mixed greens
- ½ cup goat cheese crumbled
- ¼ cup walnuts toasted
- 2 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 pinch salt to taste
- 1 pinch black pepper to taste
Preheat oven to 400°F (200°C).
Wrap beets in aluminum foil and place on a baking sheet. Roast in the preheated oven until tender, about 45 minutes. Let cool, then peel and slice.
In a mixing bowl, combine mixed greens, sliced beets, crumbled goat cheese, and toasted walnuts.
Drizzle with olive oil and balsamic vinegar. Season with salt and black pepper to taste. Toss gently to combine.
Serve immediately.
