Basque Codfish Stew Recipe
A hearty and flavorful Basque-style codfish stew.

Main Ingredients
- 1 lb Codfish fillets cut into chunks
- 2 tablespoon Olive oil
- 1 Onion chopped
- 2 Garlic cloves minced
- 1 Red bell pepper chopped
- 1 Green bell pepper chopped
- 1 cup Tomato sauce
- 2 cups Fish stock
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 2 Bay leaves
- 1 tablespoon Chopped parsley for garnish
Heat olive oil in a large pot over medium heat.
Add chopped onion and garlic, sauté until softened.
Add chopped bell peppers and cook for another 5 minutes.
Stir in tomato sauce, fish stock, paprika, salt, pepper, and bay leaves.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Add codfish chunks and simmer for another 10-15 minutes, until fish is cooked through.
Remove bay leaves, garnish with chopped parsley, and serve hot.
