- 1.5 cups All-purpose flour
- 1 teaspoon Baking soda
- 0.5 teaspoon Salt
- 0.5 teaspoon Ground cinnamon
- 0.25 teaspoon Ground nutmeg
- 1 cup Granulated sugar
- 2 Large eggs beaten
- 0.5 cup Vegetable oil
- 1 teaspoon Vanilla extract
- 1 cup Mashed bananas about 2-3 ripe bananas
- 1 cup Grated zucchini squeezed dry
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a large mixing bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
In another bowl, beat the sugar, eggs, oil, and vanilla extract until well combined.
Stir in the mashed bananas and grated zucchini.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
